Rinse off any leftover sanitizer/dust and cool/wet the inside of glass

Proper head, lacing, and /or bubbling on the glass. If the glass is beer clean, it will allow for a proper head to form and be retained, lacing will also form on the glass after sips.

Bitterness can be measured directly with IBU's. Percieved bitterness is dependent upon how bitter the beer is in regard to the other ingredients and flavors involved.

Storage. It is the long cool storage of a beer. It also refers to a species of brewer's yeast that ferments beer at a lower temperature that ale yeast.
